Remember watching videos in biology class of the war between the body and the flu virus? They – in a very Star Wars fashion – demonstrated the body’s way of producing antibodies to defend itself from these invaders. Antibodies can also be produced after eating a food the body deems as harmful. So, antibody testing is the most effective way to test for food sensitivities or intolerances.
Food allergies cause immediate and violent reactions in the body. As well, the body produces the antibody IgE to fight them off. However, true food allergies are rare.
In contrast to food allergies, food sensitivity and intolerance is more common and can be a long term reaction. It is a response to a particular food or compound found in a range of foods. Intolerance can result from a variety of reasons including the absence of specific chemicals or enzymes needed to digest a food substance. It may also happen from an abnormality in the ability to absorb certain nutrients. Gastrointestinal reactions such as an irritable bowel (also called “leaky gut”) syndrome can be due to malabsorption or other abnormalities. Prior to the development of NutriScan, the diagnosis procedures that identified a food sensitivity and intolerance were time consuming and lacked specifying the exact food.
Today, new studies have revealed that long term reactions – as well as delayed reactions – to foods are more accurately identified by using the NutriScan test, which measures the level of the antibodies IgA and IgM in saliva. Offensive foods have been shown to lead to the early production of IgA or IgM antibodies in saliva, as soon as 5 months before the clinical signs of bowel disease become apparent. In some cases, antibodies to food ingredients can appear in saliva that are not even present in the blood.
Other than time-consuming feeding trials, which eliminate potential reactive ingredients every several weeks, testing for this condition has used expensive and unsightly skin patch testing.
